Peach Lemonade Slushie

Summer fruity drink cocktails are such a treat! This peach lemonade slushie can be ready in five minutes for an impromptu cookout or a lazy evening on the porch.

On Monday, I made up a wonderfully fresh new fruity recipe (a spin on this one from the past). I had all the ingredients fresh from the store, my lighting and backgrounds all set (fellow bloggers/photographers can relate), and I was delighted with how everything tasted and came together. As I began to write this post and upload photos, I realized I had no memory card in my camera... and no great photos featuring great recipe with great lighting and backgrounds. Fail.

Well, guess what? I returned from the oops to an even better. Using some of the remaining fabulous ingredients I created this new recipe for a peach lemonade slushie that's even better than what was going to be here, had I remembered to put in my SD card. So, take that, Monday.


Mix the ingredients listed below together in your blender. Combine until they are mostly blended. For serving, you can either freeze for 24 hours and make a hard slush, or serve immediately for a softer version.

Combing one half slushie with one half Sprite/7 Up type of beverage and stir.

Caution: these go fast. This recipe comfortably serves 4 for a toast on the deck.

6 fun water balloon games: Endless Summer Projects

The hot days of summer bring on lots of water play at our house. And beyond the sprinkler and waterslide, we love water balloon games. The surprise of the break in combination with an instant soaking speaks to the unique beauty of summer fun! For today's Endless Summer Projects, we're sharing 6 water balloon games that we love.

1. The Fast Fill

The first (and sometimes most difficult task) of a good water balloon game is having lots of water balloons at your disposal. This game is for the older kids/adults in your group. It's a race to see how many balloons you can fill up and tie off in a set amount of time. Be careful, you're likely to spray yourself and others as you attempt to knot balloon ends and find the ones that leak and explode!

This game is a great way to kick off the balloon festivities because it gets everyone a little wet and laughing at themselves and each other. Make sure you have a secure location, like a bucket or baby pool to hold all the completed balloons.

2. The Balloon Pinata

A twist on the traditional pinata game with the prize being a great splash! Fill a handful of balloons and tie them together with string strong enough to hold the weight of the full balloons. Find a great location to hang the pinata for the various gamers to reach. Perhaps a tree limb, a playset, or a gardening tool might work well.

Be ready for a few sets of swings to make sure all the balloons have burst!

3. The Balloon Toss Through a Hoop

Of course, you can do the traditional balloon toss back and forth, moving one pace further with each successful catch.

But we like to get everyone involved and take it to a different level. Have someone hold a hula hoop and have two team members work together to toss the balloon through the hole to their partner on the other side. Be careful, that hoop might cause a quick break in a balloon!

4. The Spoon Balloon Race

This is a take on the outdoor egg race game. If you have small water balloons like we do, find large serving spoons to balance them upon. Some of our balloons broke before we even got the race started, so if you're a fierce competitor, use both hands to keep your balloon steady until the GO! signal is made.

Determine how far you want your race to go (and if you want to lap back to the start line), and go as fast as you can. The object is to make sure you finish the race with your balloon balanced and in tact on your spoon - and you can use only one hand. If your balloon falls off, you have to go back to the starting line. If your balloon breaks, you're out of the game!

5. The Balloon Explosion

Lay out a tarp or vinyl tablecloth on the ground. Sprinkle baking soda on top of it. Fill balloons with a mixture of vinegar and water. Watch the explosion!

This one is all about who can make the best effect. Consider making small piles of baking soda on the cloth so that participants have something to aim for. This one is a great science experiment brought to life!

6. Soak Your Sibling

This is our favorite - a combination of balloon pinata with a hint of a dunk tank. Caution on this one. Be sure you have gentle participants with good aim so that they do not hit one another with the bats, but only hit the water balloons.

Everyone takes a turn sitting under the pinata. The batter keeps his/her eyes open and tries to break the pinata in as few hits as possible to get his/her sibling as wet as he/she can while remaining dry themselves.

Awesome ways to end the school year

Hello friends!

It's the last week of school around here, and I feel like we are barely limping across the finish line. I want to share and reshare these great ideas for how to end your school year with fun and celebration! Here are three activities we're doing this week to make the start of summer a treat.

Teachers are busily signing these sweet books for each of our children. I'm keeping them a secret (shhh!) until their high school graduations, but I love reading the thoughts from special people in their lives. I did a post on this project if you want to try something similar for your littles.

We're making final thank you presents for the best teachers and attaching these tags. By the time the end of the year rolls around, these hard working individuals could use a laugh and an extra treat. Click on over here to get your own set of printables to add to your gifts. They also make great final lunchbox notes for the students in your life.

If you're looking for a quick, meaningful, but inexpensive final gift, try crafting some of these chalkboard frames for your teachers. We've made them the past few year, and they've been a big hit.

I have this printable from Classic Play all ready to go for my preschooler and big kids to run through! There's nothing like the feeling of crossing the finish line and accomplishing another year. I wonder how I ended up with a 4th grader - yikes! But I'm so excited to have them in summer mode to enjoy the warmth and sunshine together.

4 must-try ways to enjoy art museums with kids

What are you planning to do this summer with the kids? Water parks or amusement parks? Day trips to historic monuments? Camping? How about hitting the local art museums!! They can be a whole lot of fun, too. Kids and art are a fabulous pair.

And art transforms us, while helping us remember who we are. It defines us as human beings and sometimes even elevates our handiwork to show a sliver of heaven and Divine creation.

But even with all that beauty and awesomeness in an art museum space, a family excursion to a quiet, clean, monitored space can sometimes be a total disaster or at best a giant headache. Today I'm sharing our ideas on how to make these journeys peaceful, enjoyable, and can I even throw in... inspirational? Well, let's start at peaceful.

1. FEED AND HYDRATE EVERYONE FIRST

I know it's an obvious, but it deserves its very own point. Do not take children to a museum and expect them to have energy to walk and interest to look unless they are hydrated, fed, and relatively rested (that goes for the adults, too). Hitting the sculpture garden with a cranky, crying, tired child will leave you beating your head against the wall.

Enter the excursion with a sense of energy and enthusiasm and time it well. Early morning and mid afternoon can be a wonderful time to explore art. Side note: make sure you hit the restrooms before hiking up the stairs to the Renaissance wing.

2. DO YOUR RESEARCH AND SHOW YOUR LOVE.

If you're going to a museum you've never been, take the time to learn the highlights and find your own must-sees. Your children will feel your enthusiasm and want to discover right along with you if you set the tone in the right way. It will also encourage your children to find their own favorites and show them off to you! Let them know you're interested in the art they love.

3. HIT THE GIFT SHOP ON THE WAY IN

Never would I have thought this was a good idea until I read this post from Gabrielle. So, we tried it. We went right in to the store (much to my children's delight), and it was a great way to see quickly the most

famous works in the museum. We had each child pick postcards of their two favorite pieces. With art museum map in hand, we made our way around to each of their picks and enjoyed what we saw along the way to these galleries. We then took each child's picture with their favorites, and these works became something personal and a special memory from the visit.

4. IF POSSIBLE, BRING YOUR SUPPLIES.

Many of the larger art museums ask that you check your bags. Smaller art museums are more flexible. When we can, we have the kids bring along their sketchbooks and colored pencils (easy to transport, harder to do damage). Whether it's on a bench or right on the floor, sitting and sketching can take the experience to another level for kids. Let them decide the art work that they want to draw and give them as much time as you're able to complete their finished piece.

Summer Banner Printable: Endless Summer Projects

I can hardly believe it! It's that time of year again?! Bring on the Endless Summer Projects! Jen, Alexandra, Melissa, Amy, and I have been working for months to put together a fun, creative collection of projects. Well, it wasn't all work...there was a fair amount of laughter, sharing, and good old-fashioned sarcasm thrown around to get us to today.

Over these next 15 Wednesdays, stretching us long into August, we'll be sharing some fabulous ways to spend time with your children this summer and soak up all the sun-kissed joy of summer!

Most of us are not yet into the official summer schedule. We have 19 days left of school (but who's counting, right?), and I'm always looking for memorable ways to celebrate the close of another year. Our typical tradition includes stopping by teacher's classrooms to thank them for a good year and enjoying a lunch out all together, since the last day is typically a half day.

Summer Anticipation Printable

Anticipation of something amazing is almost as fun as the actual event, right? Well, that's certainly the way we feel around our house. I'm grateful that my children love school, but I also know that we are all ready for a break in projects and homework, a break in the weather, and a return to some of our favorite activities.

We try to mix in learning with our summer relaxation time so that our children realize again that learning is fun and a lifelong pursuit. About this time every year, as the school year winds down, and our plans for summer begin to solidify.

It's summer daydreaming together, and it's also been a fun way to collect this moment in time for each of my children...as their wishes change so much from year to year and mark this special time in their childhoods.

I also love sharing what I (and my husband) enjoy about summer and what we want to learn and do. It's a great way to pass along our family history and also to open up little eyes to big possibilities.

Endless Summer Projects: A House Fit for a Bug

Hello lovelies!

Shouting out to you from the road today. I'm on a crack-of-dawn flight out of Chicago this morning, and I'm on my way to meet some great friends and enjoy a delicious dinner in New York City.

I'm not leaving you lonely though!! I have a fabulous project to share from the incredible Jen of Classic Play. I have had a handful of mommas ask me how we're filling our days this summer. Well, guess what? We are making bug houses! That's a great response, right?

We're growing caterpillars/butterflies right now, and my children have been mesmerized by the growth cycle. I can get all three of them calm and excited (interesting combo) just by sitting down next to the butterfly netting to observe for 3 minutes. It's a great transition method. My son calls these four creatures our new pets. And what would a new pet want more than.... a beautiful house.

Celebrate the Normal: This is summer

Hey friends, Happy Tuesday to you!!! How's this week started off for you? So far Monday was a frustration, and Tuesday has been jam-packed with work. We are week #1 of summer vacation for my three kids.

With a mom and dad who work full-time, these balls of energy spend their mornings busy at a variety of camps and then home with me in the afternoons. I so look forward to our summers together. Though I'm always more preoccupied with work than I'd like, it's our time to take on new projects, lie in the grass, and eat every meal outside.

However, transitions from one schedule to another are not my specialty, and this first week moving away from the school schedule and in to the summer version is always more stressful than I anticipate. Note to self: be sure to have wine and chocolate close at hand for this first week of summer.

Your glimpses of summer have dropped my blood pressure and brought a hint of jealousy here and there (check out Joy's photo below). Seriously, why don't we all live in Hawaii??

Thank you, thank you to all of our talented artists this week. I really enjoyed seeing your view of summertime. To help keep in fresh around here, we switching things up for next week.

Next Tuesday, I'll be in a full-on panic mode, getting ready for my first ever trip to New York City. I'm headed there for the Alt Summit NYC conference at Martha Stewart's HQ. I'm rooming with two great blogging pals and getting to meet dozens of ladies with whom I've collaborated in the last year. I'm more than over the moon about this and also slightly scared out of my mind (jeepers).

So in honor of being bold and putting yourself out there, we'll be celebrating the abnormal next Tuesday. I'll be watching for posts and photos up until next Sunday at midnight.

Summer Bucket List

One of my favorite activities to do with my kids? Dreaming. At the ages of 3, 6, and 8, they are specialists in the fantastic, over-the-top story kind of ideas. They also know how to love the simplest activities into wonderment.

This time of year, as school winds down, and the sun stays out longer, we begin making up our summer hit list - all of the fun we want to experience together while we have some time away from the usual routine. I love hearing the activities that make the list every year (bubbles, fireworks, the beach), and I feel that momma twinge that these beauties are growing too fast when I hear about the bigger wishes of seeing the ocean and renting a kayak.

I'm sharing our list again this year, as well as last year's list, in the case that they might inspire some summertime unexpected experiences for you and yours. Also, check back to this post that has oodles of other amazing summer ideas for you to soak in.

Summer Reset

Hey y'all. It's almost here. It's almost summer. Spring is the happy harbinger of summer.

And summer is extraordinary here in the Midwest. It is the time of year that color fills every view, and the warmth of the sun melts away the memories of the gray that surround us the remainder of the year. This summer I'll be hitting the reset button, finding space to bask in childhood alongside my kiddos, take some time to party, and give myself the space to create and rest. But I'll be doing it in the midst of a busy professional life (our busiest time is always the summer) so we're in this together to hold each other accountable.

Pars Caeli is following along so welcome to our new regularly scheduled time for summer blog posts! If you're following me over on Twitter, you read my easy breezy announcement to stretch weekends to four days (oh, how I wish I actually had that power). Beginning this week and continuing into the beginning of the school year, I'll post every Tuesday, Wednesday, and Thursday. Sometimes you just need a Friday away from social media and devices...and then maybe you need a Monday, off, too. :)

Getting kids prepped for summer

In less than 80 school days, my three giant personalities (wrapped up in small bodies) will complete their academic and developmental years and be ready to run hog wild into summer. As much as I would love to be home with them, taking on new adventures that only the warm weather can bring, the reality is that I'm a working mom. I work from home for a portion of every day so I'll get to partake in sandboxes and water balloons. And whether I'm in the office or at home, it's really important to me that my children have a summer of fun, outdoors, activity, and as much magic as I can muster.

Are your minds turning to summer yet? We're there. Ready to plan it and live it. Here are my thoughts on how to make this summer a mutually awesome experience for parents and children.

Think of the possibilities

My favorite beginning to the process is the dreaming. This is not necessarily my husband's favorite, so draw from your strengths. I love to have "what if" conversations with three-year olds (you just never know what you'll get) and daydream along with eight-year old minds. Sit down with each child, and brainstorm all the activities they'd like to do. Consider categories like "I want to continue," "I want to try," and "I want to learn." I've discovered fascinating new aspects about my children such as an interest in Irish dancing, a want to learn to stand on one's head, and a desire to make a quilt.

Consider the impossibilities

Not my favorite aspect, but the process for which my hubs excels. Look at the summer calendar. Actually, print it out and lay it down before you. Mark off all the vacation time that you can as well as times of heavy workload. Be good to parents and children as you look at the time you have allotted. Be sure to find stretches of time for full family activities, individual time with each child, and moments for mom and dad to connect.

Put your purse where your mouth is

Those horse riding lessons and the ceramic studio time? Well, they are both beautiful options that can quickly clean out your wallet. Before you make any definite plans or fill out registration forms, decide what's a realistic amount to spend on each child's activities. Obviously most activities become more specialized and expensive as the age of the child increases so try to factor that into your budgetary conversations, too. Prioritize which experiences would be most meaningful to your child and try to hit as many of those as your budget can allow.

Enlist your helpers

The chaffeuring from one sport to the next is draining and not the way anyone wants to spend the best days of the year. Right up front, ask parents of your children's friends to join the class and sign on to the same teams so that carpooling can streamline your summer and double the fun at the same time. We rarely sign up for an event or class without calling in a buddy (it's also super helpful with children who are shy to new situations).

 

Take advantage of Mommy and Daddy time

Remember that the most wonderful childhood memories will happen in simple ways in your backyard or around the campfire. Make a list of all that you want to experience with the kids this summer and commit to doing them (even put making s'mores on the calendar). Make a list of what you as adult want to do and share that with your children (and spouse) to help them get to know your hopes and dreams, too. Consider how your talents and interests can add to their summer experience. Do you have the patience to teach those knitting skills your daughter so wants to learn? Or play tennis with your son? Can you even learn something new together?


Here's our summer list from last year, and we're beginning this year's now. February and March are when camps, classes, and teams begin their summer registrations so keep an eye out in your newspapers and media. And in the meantime, let the dreaming begin.

Grown-Up Goodness: Meet Mentors

I pray about this blog. And in my prayers, I pray that this space might be one that is helpful to my family, my readers, and to me. I had no concrete reason for beginning this effort (no causes to push, no major life event or home remodel, no new adventure), but I did feel (forgive the slightly cheesy nature here) called to live a more creative, fuller life through this way of sharing with the world. And, I believe that God works often in the people that He places in our lives.

So, when this summer began, and I crafted my own list of summer experiences, I had a vague category pertaining to blogging and creativity. I knew that I wanted to grow more, learn more, and challenge myself more. I did not know that lovely women like Gabrielle, Jennifer, and Joy would all be so kind to invite me share a bit of their web space to talk about life, creativity, family, and fun. Nor did I realize amazing ladies like Paige and Janae would become real life friends through their writing and support.

Though I'm slightly more introverted than extroverted (just 1 point on the Myers-Briggs scale), I can surprise myself when it comes to meeting new people. Maybe it's my experience of many childhood moves or my desire to make the most of the time I've got on the planet, either way, I love the energy that comes with meeting people I admire. In this case, some great bloggers who so generously offered to sit down with me...in person.

Example #1

This is the talented, enthusiastic Amy Allen Clark. She's kind of a big deal around here - making news appearances, getting her own book deal, and hosting a very informative blog called MomAdvice.com.

When I tweeted her about my status as a new blogger, she replied right back, insisting that we should meet for coffee. *Gulp.

Just to put it in perspective, I looked at her Twitter numbers. At the time she had a little over 11,000, and I had a little over...100.

Nevertheless, I said I would be honored to meet up (because I would be and was). Despite one reschedule for child illness, we made the date.

I learned a ton just hearing about her experiences as a writer, marketer, blogger, and mom. This lady has it all together and knows how to create beautiful projects, delicious food, and find opportunity to match her inspired spirit. I am so excited to read her new book (not yet published), and it feels great to know that I have someone I can call upon for advice and ideas.

Example #2

This is the smart, creative Melanie. She's a writer, designer, blogger over at Inward Facing Girl. I first heard about her in a class I was taking where she was described as "a writer who can really talk about anything in an interesting way." So true, check her out.

She was so kind to meet up with on her vacation. Really, who's that sweet? My fam had a few hours at the beach as I stole away for smoothies and coffee. I've been a creative professional for 13 years now, and I have never been so happily overwhelmed by the creative generosity I've experienced from other bloggers. Melanie was so warm and had a ton of great (unsolicited) ideas for ways I could grow my blog and connect to other fabulous people.

 

I share these stories with you, reader friends, because 1. I think you should go hang out on these ladies' blogs and give them some comment love and 2. I know that you have people you admire/follow, people you'd love to learn from (or just hang out with), and I'm telling you to go for it. Stick your neck out there and meet them. Like, in real life. And try to not to sweat your outfit too much like I did. Both times.

I'm most grateful to God for placing these new friends into my life and for the gifts they've so freely shared. I'll continue to pray that my blogging brings goodness to those who inspire it and those who read it. And I'll be grateful for the companions along the journey, too.

Funday Fashion Monday: To the Windy City

Good Monday, everyone! I'm sending you greetings from the lovely city of Chicago. We're enjoying some fun family days here in the city, soaking up a fancy hotel, museums, parks, trains, and boats, too! I love Chicago, and I could really use some time away so cheers to a great few days!

How was your weekend?

I'm not sure what the weather has been like in your part of the globe, but here in the Midwest, we've been experiencing cooler (65 degree) weather and rain. It's put me in the mood for my favorite season, and though summer is so fun, I think I am ready for the beauties of autumn.

Today's look is a transitional summer/fall (or walking around a windy city) ensemble.

                   

Those bright pants: Color blocking! Let's embrace it with some great skinnies!! Seriously, I think every gal should find a fun color of pants for the Fall.

That cool top: I've been eyeing some great Dolman-sleeve tops, and I love the material and neutral tone to this one.

Those shoes: Open toed booties still offer a hint of summer pedicures and the stylings of next season.

This scarf: Stripes and colorblocking. I love tying my scarf around my bag when the sun peeks through the clouds and warms things.

That green handbag: Keep a little green going into the autumn tones. This one is bright and can pack a whole lot in it.

Those pyramid studs: These are from a great Etsy shop in a rose gold. Fun and funky.

Grown-up Goodness: Music in the Park

So, here we are at the end of July, friends. Summer is whipping right by us. Time to check in. Have you soaked in enough Grown-up Goodness from your summer list? I've gone back to mine, and I'm really delighted by how many experiences we've been able to have from my original wish/hope list.

This weekend we traveled into Chicago to see my in-laws and take in a great children's concert at Ravinia, an outdoor music festival with pavilion and lawn seating. I bought up the $5 tickets on the lawn for our fam, and we enjoyed our picnic lunch as we awaiting the singing and dancing to come. The number of children and strollers and sippy cups seemed exponential for the very fun, sold-out show by Laurie Berkner.

 

               

Concerts in the park are such a great part of summer for me. In all honesty, I'm not even picky about the genre of music. When it comes to being out in the sunshine or relishing the sweet summer evening, I can be romanced by any artist.

This past Saturday was a high-spirited, youthful hour of sillyness.

We've taken in orchestral performances, operas, contemporary solo artists, acoustic bands, and local starlets. And I've enjoyed everyone MORE because of the setting of the great outdoors. These concerts say to me, "Throw down the blanket, toss off the shoes, and get out the snacks (or wine glasses) because this will feed your soul and make a memory you'll come back to, again and again."

My favorite open-air concert to date? Lillith Fair, hosted by the talented Sarah McLachlan. My hubby and I were just in our early courtship days at the time, and the beauty and power of those amazing female voices lilting through the sunset breeze...

Funday Fashion Monday: Outdoor concerts

                  

Hi, friends! Happy Monday to you. I'm super excited to be over at Joy's place, Frock Files, as a Bright Light. I have some very fun ideas for you over there and a little bit more about me...Come on, let's go!

Are you all over the Olympics like I am? We managed to pull ourselves away from the set to head into Chicago for some time with family.  We also danced and sang as we watched a great outdoor kids concert. And let me say, I was surrounded by some fashionable mommas.

Here are my picks for a cute number to take you to your next outdoor music show.

That dress: Such fun colors for summer, no? This pattern looks so special, made just for this dress., and I love the turquoise/burnt orange tones to the simple silhouette.

Those shoes: Green shoes. I don't know...I just like 'em.

Those cute earrings: The great pop of color close to the face will do as much for your glow as a nice bronzer.

And a fun hat: Summer is the perfect time to try out a top accessory. This great hat is a terrific topper for a daytime concert in the park.

A tri- to try

Happy Friday! It kind of feels more like Tuesday, but, hey, I'm going with it. We have plans for the pool, the sprinklers, and lots of icy drink around here for the weekend; it's going to be super hot.

I have a triad of ideas for you to discover over the weekend...one for today, one for tomorrow, and one for Sunday.

 #1 FROST SOMETHING
Are you celebrating something this weekend? Perhaps 7/7 on Saturday or Video Game Day on Sunday? Well, even if you're not going to throw a party for either of those, here are some great ideas for frosting a cake. Kelly over at Studio DIY has some great tricks that can make even the least professional among us (pointing to myself) look ah-mazing. For little C's birthday, I disguised my lack of skill under rainbow M&Ms, and I was pretty pleased with the results and flavor.
 #2 PULL OUT THE WATERCOLORS
Watercolor pencils are my new favorite art supply. They have the control of pencil and the blending ability and surprise of watercolor. When was the last time you took a sketchpad outside with some pencils or watercolors? Try it this weekend.

#3 MAKE MESSY SUMMER HAIR
Undone hairdos are all the rage for summer. The messy bun, the roped pony, the loose braid–all beautiful and breezy. Anthropologie posted some great ideas for hair that shows the ease of summer. Here's M's version of a messy twist, designed and styled all by herself.

Happy Fourth of July, friends! Today we celebrate the great US of A and all of the men and women who have made all this celebrating possible.

In real life, we're headed over to a friend's house for a cookout/bouncy water slide kind of afternoon, and we'll finish it off with fireflies and fireworks in the backyard. On the blog here, I've decided to throw a pool party!!

I had an in-ground pool for two years when my family lived in a wonderful, warm climate, and I have such great memories of hot afternoons under cool water. These days I don't have the luxury of a pool in my backyard but I can still throw a great party, and I have one cooking for you!!

Louise, Mo (one of my favorite Canadians), and Jess have fired up some great recipes and fashions for you to kick back and enjoy on this beautiful day. Thank you, wonderful women, for coming over and setting the place on fire with your creativity. So, have a seat on the chaise, grab a glass of Southern Belle, check out what Mo's wearing, and be sure to grab a heaping helping of that orzo salad Jess put together.

Jess is a science educator by day, and a runner, reader, dog lover, and chef on the nights and weekends. She pretty much knows everything about everything, and she's cooked up an easy, scrumptious summer salad that I'm really looking forward to making for me. Here's Jess...

It seems the dog days of summer have arrived early this year. If you’re like me, your interest in cooking has hit a yearly low. Fortunately, all the wonderful fresh produce makes it easy to create simple, flavorful dishes, like this summer orzo salad.

I particularly love anything that allows me to incorporate farmer’s market finds and fresh herbs from my garden. This week, I was lucky enough to find some beautiful grape tomatoes, and decided to feature them as the star of a simple salad. I also decided that I would use my new favorite herb – boxwood basil.
I found this guy while shopping for herbs and veggies this spring and was immediately smitten. It tastes and smells just like a sweet basil, but the cute little leaves mean that no chopping is required! Less prep time = more time enjoying summer.

I love this salad because the light dressing really allows the flavors of the tomatoes, basil, and feta to shine through. It’s wonderful both hot and cold. It’s also very versatile. Substitute fresh mozzarella, cubed, for the feta, or add chicken or tofu to make this a more substantial main dish.
Serves 4 as a main dish, 6 as a side.

Ingredients
  • 1 1/3 cup orzo
  • 1 pint grape tomatoes
  • 5 oz feta cheese
  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • Juice from one lemon (not pictured)
  • ½ - 1 cup fresh basil, chopped
Cook orzo according to package directions. Drain well. Wash and halve grape tomatoes. Wash and finely chop basil.

In a small bowl, combine olive oil, red wine vinegar, and lemon juice. Whisk to combine.
In a large bowl, combine orzo, feta, tomatoes, and basil. Add olive oil mixture and toss to combine.
Serve immediately if desired, or store, tightly covered, in refrigerator. Best enjoyed on a deck or patio with good friends and a glass of wine.

Easy Blueberry Cobbler

Do you pick? I mean, do you pick your own fruits and veggies fresh from the farm? We live just a mile from an incredible organic blueberry farm that offers nine different varieties of blueberries, and we make 2-3 journeys every summer to pick, and pick, and pick (and eat and eat and eat).

Our kids love the experience of the multitude and expanse of bushes for as far as the eye can see. So many rows and rows of blueberry bushes are just the right amount of overwhelming goodness. As the girls have gotten older, they've grown to love the blueberry overall, also known as the strapped-on bucket to catch the motherload!

We picked for about an hour and a half and brought home a great beginning with eight pounds of fresh Spartan blueberries.

Now what to do with all of these?

C has eaten blueberries for every meal and snack since we returned so we're already two pounds done with our first batch! Thankfully we're just steps away from our next pick. My hubby makes blueberry pancakes for us every Sunday after Church. That's another two pounds that will go by quickly.

With a few of the remaining cups, I decided to try out a cobbler recipe I found from the great Pioneer Woman. Have you seen her stuff? Of course you have, she's so good. Well, about a month ago she posted her favorite summer desserts. I bookmarked and starred the post so that I could come back and enjoy when the time was right. I reimagined her blackberry cobbler for blueberries. Here is what you need.

Preheat that oven to 350. Melt a stick of butter in the microwave. In another bowl, pour out a cup of sugar and then add a cup of the self-rising floor. Whisk together to get rid of the lumps. Add 1 cup of milk (I love all the one cup measurements...super simple!!) Now pour in the melted butter and stir again.

Coat a baking pan with butter - top, bottom, and sides. Pour in the batter. Place an even distribution of berries into the batter layer. Sprinkle on a nice, even layer of 1/4 cup of sugar (or more if you'd like).

Pop it in the oven and go read your favorite blogs for a whole hour. The smells will delight you, I promise.

And this is the beauty that awaits you. Scoop out a heaping helpful and top with vanilla ice cream. Yum, yum, yum.Do you find summer a great time to bake? Or to pick fresh from the farm?

Living vicariously: Ireland

Tuesday, we're here!! And it's time for you to meet another wonderful. This is Claire, the fabulous big sis of one of my besties. She's an Irish friend I've had for many years who shares a passion for exploring design and crafting. We're living vicariously today...in Ireland.




For the past few weeks I have been happily soaking up the joy from all the summer ideas on Pinterest and my favourite blogs. Summer picnics, frozen treats, BBQ salads, floaty dresses, outdoor weddings, birthday parties in the park, drive-in movies... Images such as this beautiful picnic scene are the kind of days I am dreaming about.


And then I remember that I live in Ireland.

Now, don't get me wrong, there are many wonderful things about living in Ireland, the 'craic', the great culture, the stunning scenery, the friendly locals, however it is also fair to say that we have a fairly complicated relationship with Summer weather.

Put simply, you are likely to need your raincoat for all but about 2 weeks of the year. I'm not saying that it rains all the time, because it doesn't, just a little of every day. We have light showers, heavy showers, every kind of shower except for Wedding and baby showers (but that is a whole other issue!). It means that only the most optimistic of party-planners are seduced by outdoor paper lanterns and luminaries, as damp paper doesn't look good in any language.

Last year I moved to live at the coast  in the most Northwest corner of Ireland, beside amazing wide golden sandy beaches, miles long. Here is my local beach on one of the ten or so days of summer we've had, truly glorious.
Today, in the middle of June, I'm looking out at driving rain and 54 degrees. My garden chairs are calling to me, bemoaning the fact that I promised them sunshine and lunches and dinners al fresco, and they have barely a dent so far.
 
But you know, the Irish summer makes you hopeful. There is nothing like the rush in the shops for shorts and flip-flops on the first day of sun in early May when 'exam weather' arrives to make a whole country think that this will be the year of the hot summer, just like the ones when we were kids and the sun seemed to shine all summer long. My mummy will inevitably tell me about the long range weather forecast, which promises a summer of BBQs and Vitamin D for everyone.

Then when we stop being hopeful, about the middle of July, we start being grateful. Grateful for even two sunny days in a row. Grateful for warm dry days at the beach, with hot tomato soup  after you swim in the cool Atlantic, even if the sun doesn't shine. Grateful for the beautiful green of the country and for a pub with a fire on and some nice pub grub.
And there is nothing as hopeful or as grateful for a sunny summer day as an Irish Bride! Not many people outside Ireland know that the summer weather for weddings is actually controlled by a small statue of the saint of the Child of Prague.

It is traditionally placed under a hedge the night before a wedding to ensure a dry day for the bride. Before the weddings of both my sisters there were multiple statues under multiple hedges placed by my mum's friends.. and it did work for them!

However, for those brides who do have to use their umbrellas after all, there is still gratitude. For a bright day, or that they at least got from the car to the church without the rain, and if all else fails, that the notoriously fragile neck on the Statue survived the trip under the hedge! (There are many Irish homes where a beheaded statue of the Child of Prague awaits some super glue after an over-enthusiastic game of football indoors) :)

So come to Ireland... and bring your raincoat!

And as for me, I'm off to Portugal for a week to lie on the beach where I am guaranteed a recharge of Vitamin D!
